Mini Apple Crisp

I am definitely on an apple kick this fall, we certainly love our apple desserts here in the Gill household!

When making Single Serve Apple Pies, recipe here. I had some  mixture left over.

I put together these mini apple crisps in a flash.

Here’s the recipe for Apple Crisp.

(I just eye balled the amount I would need for these little ones, the recipe below is for a 9×13 inch baking dish)

10 medium apples
1/2 cup (125 ml) white sugar
1 tbsp. (15 ml) cinnamon

Crust

1 cup  quick rolled oats
1 cup  brown sugar (packed)
1/2 cup  white flour
1/2 cup  melted butter

Preheat oven to 350°F

Peel and slice apples. Place  into 9 x 13 inch glass baking dish. Sprinkle white sugar over apples and sprinkle cinnamon over the sugar.

Mix rolled oats, brown sugar and flour until blended well. Stir in melted butter until fully moistened. (I use my fingers to mix)

Cover apples evenly with topping.

Place in preheated oven and bake 35-45 minutes until golden brown and bubbly.

This is absolutely delicious still warm with vanilla ice cream, yummmmm.

Autumn Cupcakes

These autumn cupcakes are delicious and beautiful to look at too. They look as if a lot of effort went into making them…but fortunately the are fun & easy to make in no time flat!

Grab a white cake mix and prepare according to the package directions. Place 1/2 of the cake batter in a separate bowl and mix in orange food coloring. Layer the batter in your lined cupcake tin, alternating between colors.

Bake according to package directions & let cool.

I placed the entire tin in the freezer for a quick cool down.

I could eat them just like this, without any frosting! They are so moist and spongy!

For a quick frosting I didn’t use frosting at all. I mixed up a package of Dream Whip, put it in a frosting bag with a wide tip and quickly swirled a generous amount on the top. Sprinkle cinnamon over the dream whip to make it all pretty!

And that’s it…done…oh one last thing, eat a cupcake just to make sure they taste good before you give them to your family!

Valentine Pretzels, Mmmmm…

 Valentine Pretzels, Mmmmm...
These pretzels have just about dissapeared even before I get the blog post finished!
They are a big hit with the kids…making them & eating them!
I have tried a couple myself and they sure are morish.

I started with a bag of Wilton Candy Melts in Blue.
I followed the package directions and melted them in the microwave, stirring several times between intervals.

Grab a bag of your favorite pretzels.

And next you just start dippin’.
I lined baking pans with wax paper and layed the dipped pretzels on the wax paper to harden.

Don’t forget to add sprinkles to make them even cuter!

Don’t you just want to pick those sprinkles off?
Mmm, mmm, mmm.
These would make a perfect valentine gifts as well.
Grab a mason jar and fill it up.

I decorated the jar with a paper doilie heart, red twine, red ribbon, and valentine stamps.

These are so easy to make, you can have them done in an hour, just try not to eat too many or you’ll have none to give!
