When I got married I received the most practical gifts from one of my husbands aunts…

…a recipe box full of her recipes…. Pretty neat…right?

That was 13 years ago…

I haven’t quite gotten around to making all of those recipes…there were a lot…

A little while ago I went through that recipe box and my eyes settled on this little gem…

 

Lemon Squares

Ingredients

2 Cups Flour

3/4 Cup Sugar

1 Tsp Baking Powder

1/2 Tsp Salt

2 Cup Coconut (optional)

1 Cup Margarine

I Pkg Lemon Pie Filling

 

Directions

Blend Together dry ingredients. Cut in butter and mix by hand until ingredients form a crumble. Press half of mixture in bottom of 9 x 9 pan. Prepare lemon pie filling and spread over the pressed bottom. Sprinkle remaining crumble over top but do not press.

Bake at 350 degrees for 25 minutes.

I love the tang of the lemon paired with the sweetness of the crumble – a perfect combination.

I love anything lemon…the perfect flavour.

Partridgeberry Loaf

This is my go to fall recipe when I want to have a little something in the house to snack on.

There are an abundance of partridgeberries in Newfoundland and they are free if you mind to go and pick them yourself.

Lucky for me, my parents are into berry picking and my freezer is laden with berries each fall.

These berries are tart and they are perfect for jams, pies, squares and of course loafs like this one.

A slice of this paired up with a cup of coffee is divine!

Or you can just shovel it in you mouth by the handful like my daughter must obviously do because as soon as it’s out of the oven it seems to disappear. I’m so glad she likes my baking.

Partridgeberry Loaf

350 degrees for 1 hour plus a little bit – so yep, after the hour is up you pretty much have to keep a close eye on it.

Ingredients & Directions

1 3/4 Cup Flour

1/4 Tsp Salt

2 Tsp Baking Powder

Sift dry ingredients

then mix in

1/2 Cup Butter

 Beat in

1 Cup sugar

1 Egg

3/4 Cup Milk

1/2 Tsp Vanilla

Fold in berries, use as many as you like…I usually use 1 cup and a few extra for good measure!

Put you batter mixture in your loaf pan, sprinkle sugar on top and bake!

Yes, you can switch out the berries, try blueberries…so yummy too!

Buttery Tea Buns from Newfoundland

Buttery Tea Buns

Ingredients

5 cups flour

5 tsp baking powder

1 cup butter

1 cup sugar

2 eggs

1/4 cup milk

1/4 cup water

1 cup raisins

Directions

Preheat oven to 350 degrees Fahrenheit.

Mix first four ingredients with hands in a large bowl. Place eggs, milk and water in a small bowl and whisk together. Pour liquid ingredients into flour and butter mixture and mix with hands until dough is formed. Add in raisins, turn dough over onto floured surface continuing to fold in raisins.

Lightly flour a rolling pin and roll out dough to about 1 inch thickness. Use a small glass to cut out circles in dough, repeat until all dough is used.

Bake on greased cookie sheet or parchment lined cookie sheet 10-15 mins.

(I set my timer for 10 mins then continue to check buns until they are done to perfection!)

Makes about 40 buns.

This is my Mom’s recipe and I follow it to a T, it’s so easy to make and the ingredients are regular items you can usually find in your pantry.

I love her raisin tea buns sliced down the middle and spread with butter. These also freeze well too!
