When I got married I received the most practical gifts from one of my husbands aunts…
…a recipe box full of her recipes…. Pretty neat…right?
That was 13 years ago…
I haven’t quite gotten around to making all of those recipes…there were a lot…
A little while ago I went through that recipe box and my eyes settled on this little gem…
2 Cups Flour
3/4 Cup Sugar
1 Tsp Baking Powder
1/2 Tsp Salt
2 Cup Coconut (optional)
1 Cup Margarine
I Pkg Lemon Pie Filling
Blend Together dry ingredients. Cut in butter and mix by hand until ingredients form a crumble. Press half of mixture in bottom of 9 x 9 pan. Prepare lemon pie filling and spread over the pressed bottom. Sprinkle remaining crumble over top but do not press.
Bake at 350 degrees for 25 minutes.
I love the tang of the lemon paired with the sweetness of the crumble – a perfect combination.
