Oh, yum…these single serve apple pies sure were delicious, especially with vanilla bean ice cream!
I picked up this cute contraption at the grocery store for $5.
A mini pie maker, couldn’t get any better than that!
I made 6 of these and we had to fight over them they were so good.
They even look tasty not baked!
They are so pretty and baked to perfection.
Here’s the recipe!
Single Serve Apple Pie
2 1/2 cups 1-inch chunks peeled Granny Smith apples {3 or 4 apples, cored}
1/2 cup granulated sugar
1tbsp fresh lemon juice
1/4 tsp cinnamon
Pinch ground cloves
1 pkg Butter Puff Pastry, thawed but cold
1 egg, lightly beaten
1. In a large bowl, stir together apples, sugar, lemon juice, cinnamon & cloves. Let stand for 15 minutes.
2. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
3. Unroll one sheet of puff pastry onto lightly flowered work surface. Using closed apple pie maker, cut 4 apple shapes using one side of the pie maker. Repeat with the other side of closed apple pie maker and additional sheet of pastry. You will now have 8 pieces.
4. Open apple pie maker and dust lightly with flour. Gently press in one of the solid dough cut outs. Fill centre with 1/4 cup of apple filling. Brush edges of dough lightly with beaten egg. Lay dough cut over top, lining up edges; press mould shut to seal edges. Lay finished pie on prepared sheet. Repeat for each pie. Brush tops of pies lightly with beaten egg. if desired, sprinkle with additional granulated sugar. Bake for 20 to 25 minutes or until evenly golden and crisp. Serve warm.

What a good idea! Most of the time I don’t want to bake a whole pie (because I’d eat it all too fast!) so this would be perfect. Great way to force myself into portion control haha.
